How much memory on the Rochen Resller Hosting machines?

1) Space (storage) and bandwidth is what you're thinking of, memory is only something that would be controlled in a virtualized environment, not on a shared server.
2) Our MVS plan is a full dedicated virtual environment which can be customized to your needs. It's similar to a VPS, but has dedicated CPU time (equal share CPU to prevent resource hogging by other users) and memory, is fully proactively managed like our other plans, and also includes the Rochen Vault service by default. If that's not what you're referring to can you provide a bit more info about what you're asking? Thanks!
